Istrian and Kvarner cuisine represents a special type of Croatian cuisine - it is a combination of continental and Mediterranean cusine. These two regions are rich in fish and seafood.
The most prominent species found on the northern Adriatic are known as the Adriatic shrimps, squid, tuna of the Kvarner bay and shells from the Channel of Lim. After exquisite prosciutto with cheese and olives, many traditional wine cellars offer fish soup, fish goulash, stew shrimp, white and black seafood risotto as well as other dishes typical of the central part of the Istrian peninsula - traditional wine "soup", vegetable like Italian minestrone ("maništra", "manestra" or "menestra") and pasta and meat dishes prepared with the addition of famous truffles that are grown in this area. It is a highly appreciated non-cultivated type of mushroom which by specially trained dogs and pigs can be found. It is believed that these mushrooms have aphrodisiac properties.
